This curry lentil soup recipe coaxes the appetite with great flavors with only a few ingredients. A delicious soup that you can pair with a crusty bread recipe and a glass of Zin!

Ingredients:
4 cups water
1 1/2 cups small red lentils
4 cups chicken stock
8.5 ounces onion
1 garlic clove
1 tsp fresh chopped parsley
3/4 tsp cumin
1 tsp turmeric
1/4 tsp coriander
1/4 tsp cinnamon
1 tbsp lemon juice
2 tbsp vegetable oil
Salt and pepper to taste
Instructions
Wash and drain lentils. Set aside.
In a large pot, add oil and sauté chopped onions for 5 minutes on low heat.
Add the drained lentils and sauté for another 3 minutes.
Add all other ingredients except for the lemon.
Bring to a boil and reduce to a simmer for 35 minutes.
Stir occasionally to avoid the lentils burning.
Season with salt and pepper to taste.
Add lemon juice and serve.
